The international gastronomic association, ‘Chaîne des Rôtisseurs’ presents Azure with a blazon

On the 21st April 2008 at an awards dinner in Stellenbosch, South Africa, Azure, The Twelve Apostles’ restaurant, was  presented a Blazon by the Chaine des Rotisseurs, an international gastronomic association with over 24 000 professional and amateur members worldwide.   Receiving such a plaque is a huge achievement and marks the tremendous skills of Executive Chef Roberto de Carvalho and his team.  A plaque, or Blazon as it is often referred to, is given to selected Chaîne professional members working at the very best restaurants with superb cuisine, service and hospitality.

On recommendation from the Bailli and the Bailliage Committee, a Blazon may be awarded to specific professional members who  are owners, managers or executive chefs of a hotel or dining establishment that maintains a superb level of cuisine, service and hospitality, as required by the exacting standards of the Chaîne des Rôtisseurs internationally.   It is essential that the establishment's support services and facilities must be excellent too.

When the Chaîne des Rôtisseurs was re-established in Paris in 1950, two of the five founding members were professionals, a Rôtisseur and a Grillardin. They were soon joined by restaurateurs, hoteliers, caterers, food and wine producers, and others. About a quarter of the worldwide Chaîne membership today continues to be made up of professionals. The experience, guidance and interest of our professionals has brought the Chaîne’s Confrérie to its present respected place in the world of gastronomy.

The Azure team are also celebrating as Siyolo Vokwana, Chef de Partie, won the  Chaîne’s Young Chefs Regional Competition for the Western Cape at the awards dinner.  This saw him taking on eleven other young chefs from around the Western Cape, including representatives from Le Quartier Français, Constantia Uitsig, Cellars Hohenort, Le Franschhoek, The Cape Grace, Ginja, Chamonix and 96 Winery Road. Siyolo will now take part in the Chaîne National Young Commis (cooks) Competition on 24 May 2008 taking on the winners of all the other provinces and if he wins here, he will then go to France in September to represent South Africa in the Chaîne’s International Jeunes Commis  (young cooks) Competition, so good luck to Siyolo.
